Black tea (紅茶  kocha)

Tasting memo
Medium body with distinctive sweetness and mellow mouthfeel. Strong sweet floral aroma of osmanthus or mimosa flowers. Very low in bitterness and astringency.

Brewing guide
[Japanese] 4-5 g/200 ml, 95°C 60 sec (1st), 80 sec (2nd), 100 sec (3rd)...(+20 sec each). 4-5 infusions possible.
[Western] 2-3 g/300 ml, 95°C 3 min.

Additional notes
Minamisayaka has Assam and Caucasus genes, which add some uniqueness to its flavor characteristics. This was originally bred for Kamairicha (釜炒り茶  pan-fired green tea), but its high withering suitablility makes it attactive for the production of black and oolong tea – like this tea.
