Kamairicha Zairai Miyazaki 30 g

This kamairicha was made by using the Japanese indigenous tea plants – Zairai (在来) – cultivated in a beautiful mountain town of Gokase. Until contemporary cultivars were established from the plant cuttings in 60's, seed-grown Zairai plants were covering the entire tea fields of Japan. This is now rather rare, but its taste keeps on bringing us to our memories of the past.

Tasting memo
Light body but robust. Distinctive toasty aroma like roasted rice. Balanced bitterness with subtle sweetness and refreshing aftertaste.

Brewing guide
[Japanese] 4-5 g/200 ml, 85-90°C 40 sec (1st), 85-90°C 5-10 sec (2nd), 90-95°C 5-10 sec (3rd-). 4-6 infusions possible.
[Western] 2-3 g/300 ml, 85-90°C 2-3 min.

Additional notes
Each Zairai plant are completely different to each other in terms of growth and flavor characteristics. This is because tea plants are "cross-pollinated", meaning that a tea plant makes seeds only when it crosses with another tea plant. Like this kamairicha, Zairai tea is made by mixing different Zairai leaves. So, Zairai is "single cultivar" but also a "blend".
