Yamacha (山茶) usually stands for the wild tea plants in the deep mountains of Kochi, but this tea was harvested from a mountain tea garden started with the cuttings of Yamacha. This challenging project has resulted in a very rich green tea. This cup is the collaboration of human wisdom and the power of nature.

Tasting memo
Medium body with smooth and juicy mouthfeel. Complex aroma shifting from mineral, floral, and vegetable broth-like to mountain herb-like as you continue with infusions. Delicate umami and sweetness, but also has mild minty after taste.

Brewing guide
[Japanese] 4-5 g/200 ml, 90°C 40 sec (1st), 90°C 5-10 sec (2nd), 90-95°C 5-10 sec (3rd-). 4-6 infusions possible.
[Western] 2-3 g/300 ml, 90°C 2-3 min.

Additional notes
The plants of this tea were propagated by cuttings of multiple wild tea plants (山茶 yamacha). The tea garden is located at the mountain slope by the river Niyodo, but in the different location from Yamacha 01. The field management is done in the same way as it used to be in the old times: tea plants are naturally shaded by wild tree species, fertilized solely with local plant materials and oil cakes, and grown without agrochemicals. Tea harvesting as well as processing (pan firing) are also done by hand.
